One pan, four ingredients, and 30 minutes. That’s all you need to make this super quick and easy dinner!
This dish uses canned pesto, which you can find next to the pasta sauce in any grocery store. You could make the pesto from scratch, but shortcuts are okay and acceptable, especially when time isn’t on your side. So without further ado, on to the recipe!
Pesto Chicken & Green Beans
- 1 lb chicken breast
- 1-1.5 lbs green beans, washed and trimmed
- 1 cup cherry tomatoes, cut lengthwise
- 1/4 cup pesto sauce
- Salt and pepper
- 2 tablespoons oil
Heat oil in a pan over medium heat. Season chicken breasts with salt and pepper. Saute chicken until golden brown and cooked completely through. Lay cooked chicken aside to rest.
Add greens to the pan and saute for 3-5 minutes, until slightly tender. Then add tomatoes and pesto. Saute for another 3-5 minutes.
Cut chicken into strips and add to the green bean mixture, stirring well enough to coat the chicken in pesto and warm through.
Season dish with salt and pepper. Serve while still hot!
