Red Velvet Cookies. Who doesn’t love Red Velvet Cookies?!
I’ve always said that baking is not my strongest skill. Sure, I know the basics and can follow a recipe well. I know the importance of each ingredient and yes, measurements absolutely matter here! But I usually mess it up somewhere along the way. So this month I’ve been practicing and baking as much as possible. It’s been a challenge. Maybe not the most healthful challenge…but come on! Who doesn’t love COOKIES!!!
To start off my baking challenge, I picked a classic cookie recipe. Red velvet cookies. The flavor combination of silky, dreamy chocolate with slightly tart cream cheese is a sweet indulgence perfect for the holidays. The surprise chocolate chips are a nice touch too! After three different test runs, I finally found a balance of flavors (and leavening agents) that work and work well. The worst kind of cookie is a flat, dry one. These are moist and chewy, and they will stay that way for a few days, if you don’t eat them all up on the first night!
This is an easy beginner recipe for anyone who wants to dip their toes into baking (like me!) versus taking the plunge into something super fancy. The cookies are almost brownie like, so moist, chocolaty, and satisfying. I don’t think I’ve ever made an easier frosting either!
I made these during the Christmas cookie season, but if you’re stumbling across this recipe later you can opt out of the crushed candy cone toppings. These red velvet cookies are just as good plain or with decorative sprinkles. I know that I’ll be making these again come Valentine’s Day!

Red Velvet Cookies with Cream Cheese Frosting
- 2 oz unsweetened baker's chocolate
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tablespoon red food coloring gel
- 2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup chocolate chips
- 4 ounces cream cheese
- 1/4 cup butter, softened
- 1/2 teaspoon vanilla
- 1 1/2 cups powdered sugar
Preheat oven to 375°F and line a baking sheet with parchment paper.
Melt chocolate until silky and smooth. This is most easily done in the microwave. Allow to cool completely.
Cream together 1/2 cup butter, sugar, brown sugar, and egg. Add the food coloring and mix well.
In a separate bowl, mix the flour, salt, and baking powder. Gradually add the dry ingredients into the wet, stirring until mixture is consistent throughout. Fold in chocolate chips.
Drop batter onto the lined cookie sheet, keeping cookies about 2 inches apart. Bake for 7-9 minutes.
To make the frosting, cream the cream cheese, 1/4 cup butter, and vanilla together. Gradually add the powdered sugar and mix until fluffy.
When cookies have cooled, frost with cream cheese frosting and decorate with crushed peppermint candies or sprinkles.
